Editor's Note

Metet Döner stands out primarily for two things: its beef-dominant composition and the fact that its döner is cooked over a wood fire. The meat profile leans heavily towards high-quality beef, with either no lamb or a very minimal amount, and only a small quantity of internal fat is used. The döner is sliced extremely thin, almost paper-like, resulting in a noticeably drier and lighter texture compared to fattier döner styles. Despite being cooked over wood fire, the smoky flavour remains subtle and well controlled, never overpowering the taste of the meat itself. The marination follows a classic approach, with no specific details shared.

The shop is located in Kuzguncuk, one of Istanbul’s most charming old neighbourhoods. Getting there can take a bit of effort, but if possible, taking the ferry is a great option and adds to the overall experience. Kuzguncuk offers beautiful Bosphorus views, a strong sense of old Istanbul neighbourhood culture, and is a favourite spot for photographers. Metet Döner is also known as a place frequently visited by well-known figures and respected food enthusiasts. While it does not necessarily rank among my absolute top döner spots in the city, it has never disappointed me. Within its own genre, it is a very solid choice, especially for those who appreciate wood-fired döner with a restrained smoky character. The brand also has a few other branches across Istanbul, making it relatively easy to find.
