Kılavuz Döner is one of the döner shops I visit a lot, because as a remote worker, I love working from different coffee shops in the Karaköy district, and Kılavuz Döner happens to be my favourite place within this area.
You will most likely visit this neighbourhood, so my recommendation is to combine this döner stop with a visit to Istanbul Modern. Within the same area, you can also find Parantez, a chef-run small restaurant that serves a nice selection of local wines and seasonal delicacies for very reasonable prices. You will usually see a mix of locals hanging out over a glass of wine as well as tourists.
Kılavuz is a very local, esnaf-approved spot. The recipe is kept the same for years, consistently. The style here leans on the lighter side: it is relatively low-fat, clean-tasting, and not overly juicy, which can actually be a big advantage if you prefer döner that feels simpler and less heavy.
